Some like to make this stew with apples, some prefer pears or black olives… in
our house we liked to make it with chianti classico wine.

Wild
boar stew
In a large stock pot, over medium to high heat, cook meat until it releases
liquid. Do this in order to temper the "wild" flavour. Prepare an abundant
amount of diced garlic, bay leaves, chili peppers, rosemary and juniper.
Add to stock pot and sautee in a generous amount of olive oil together
with meat. Brown well and add a good glass of chianti classico wine.
Reduce and add a little home made tomato sauce. Salt and continue to
cook for two hours more until meat is tender and tasty.
