When we were young and we smelled that "special" scent in the kitchen,
we knew it was a special occasion. Grandmother beppa had prepared "her" roasted
pork with milk!

Roasted Pork With
Milk
Take a good piece of deboned and trimmed pork, tied flat with rosemary
and garlic cloves to splinters in order to maintain its form. Garnish
with salt and pepper. Cook it with olive oil, diced onions, carrots and
celery until it reaches a beautiful hazelnut color. Once vegetables reduce,
add enough milk to cover the milk. Simmer with the lid on until the milk
reduces into a thick cream. Slice meat and place on a serving platter.
Strain sauce through fine sieve and pour over meat.
