of agricultural life in tuscany was left untouched, even by the explosive
vitality of the reinassance movement. As a result generations of farmers
passed down the secrets of simple dishes and genuine dishes. This is
one of such examples:

"Scamerita Alla
Cacciatora"
In a roasting dish, brown in olive oil rosemary, wild fennel leaves (or
fennel seeds), two cloves of garlic and one bay leaf. Add a well salted
and well peppered chop and cook until browned (about 10 min.). Then add
enough homemade tomato sauce to cover and cook 20-30 min. More. When
cooked remove meat with enough sauce to flavour and add to remaining
sauce previously boiled vegetables (for ex. Turnips, beans, spinach,
swiss chard).
