This for us is a very special dish, which brings fond memories of our
home. Mamma ventura started preparing it early in the morning and when
it was lunch time…
Serve very hot with this flavourful sauce, which also makes an excellent
side dish.

"Sweet And Strong"
Pork
Brown pieces of pork in olive oil. Add an abundant amount of chopped
celery, parsley and onions and cook until blanched. Gradually add small
amounts of good chianti classico wine until sauce has reduced and is
rich in flavour. Add a little tomato sauce, salt and pepper and continue
to cook for two hours more. When finished, add dark chocolate shavings,
a few drops of red wine vinegar, sugar and a generous amount of candied
raisins and pinenuts.
