Rare and interesting extract from the Giornale d'Italia di
Agricoltura (Italian Newspaper of Agriculture) From pag. 6: "Bulls
are not externally different than oxes. The only difference is
in the character: the first is full of fire, bold and audacious,
while the second is shy and heavy, as a result of the castration".From
pag. 10: "When yoking two oxes, it is necessary that both
of them are of equal strenght or the stronger one will get strained
faster and die".From pag. 11: "Oxes can work from 3
to 11 years. When 11 the ox can rest for a time long enough to
make it fat. When fat it can be sold to the butcher for double
the price it cost when it was three"
